AURUM's Cuvée 800 is our finest premium Reserve Cuvée. Handmade from rare pure 800+MGO Manuka Honey, using the French “Méthode Champenoise” (Méthode Traditionnelle) style.

Aged on lees for five years and blended with the precision of a Grand Cru Champagne, it reveals extraordinary depth, fine persistent bead and remarkable elegance.

Vibrant natural acidity, brioche and an exceptionally long, mineral finish. The distinctive character of high-activity Manuka honey brings texture and complexity rather than sweetness.

Disgorged by our winemaker in May 2026, each release is produced in an extremely limited small batch, with every bottle individually numbered to guarantee its rarity, provenance and authenticity.

Presented in a premium magnetic collector's gift box, Aurum Cuvée 800 Gold is crafted for life's most memorable celebrations and for collectors seeking one of Australia's rarest sparkling wines.
