Aurum Cuvée 800 Rosé is our flagship sparkling rosé, handcrafted from rare Australian 800+ MGO Manuka honey and co-fermented with native botanicals using the French Méthode Traditionnelle.

Aged on lees for five years and blended with the precision of a Grand Cru Champagne, it reveals extraordinary depth, fine persistent bead and remarkable elegance.

Delicate aromas of wild berries, and fresh honeycomb lead into a refined palate layered with brioche, vibrant natural acidity and an exceptionally long, mineral finish. The distinctive character of high-activity Manuka honey brings texture and complexity rather than sweetness.

Disgorged by our winemaker in May 2026, each release is produced in an extremely limited small batch, with every bottle individually numbered to guarantee its rarity, provenance and authenticity.
