Aurum Ruby Red - Vintage 2018

Aurum Ruby Vintage 2018 is our take on a vintage red wine - a deep red wine made from honey and red fruits, also traditionally called a melomel. Ageing gracefully since 2018, this wine now exhibits the deep earthy character of a fine pinot noir, with hints of tobacco and liquorice that may remind consumers of a French Syrah or Shiraz.

Local white mahogany honey was co-fermented with premium fruit - blackcurrant, raspberry and sour cherry - and aged on skins. A bright translucent ruby red in the glass, the nose is expressive with an exuberant aroma of zingy red berries and a surprising old world earthiness overlayed with a cherry sweetness.

Complex, fruity, fresh yet dry, with a lingering honey final note that pleasantly coats the palate.

After an extended period of time in French oak barrels, this wine has been resting in our cellars for years until its release and will continue to age gracefully over the next few years.

100% pure Byron Bay honey with cherry, blackcurrant, raspberry and wild blueberry. No grapes. Premium cork and wax closure.
